Roz Purcell's Coffee & Spelt Waffles

Roz Purcell has teamed up with LIDL to create an exclusive range of organic healthy recipes using LIDL's new organic range. Roz is a food-lovers dream as we all know as creator of Natural Born Feeder recipe collection. Each recipe we'll be sharing with you this weekend is designed to be nutritiotious, delicious and most importantly affordable, with most pricing at €2.35 a meal so you won't have to break the bank either!

First up are these relish Coffee and Spelt Waffles - they taste amazing and are guilt free so enjoy!

Ingredients:

• 120g Belbake Bio spelt flour

• 3 Connell Farm organic eggs

• 1 tbsp. Vita D’or Bio organic coconut oil (melted)

• 50ml Fairtrade Organic Coffee del Mundo (can be made strong or weak, depending on preference)

• 0.5 tsp. Kania cinnamon

For the coffee syrup:

• 1 tbsp. Bellarom ground coffee

• 2 tbsp. Kilderg organic honey

Equipment:

• Waffle maker

Method:

1. In a medium mixing bowl, combine all the waffle batter ingredients. Using a fork, whisk until smooth.

2. Heat the waffle maker according to iron instructions. Place 4 tbsp. of waffle batter on the moulds and cook for approximately 3 minutes (this time may vary, depending on how hot your waffle maker gets).

3. To check if they’re ready, open the waffle iron and if the top is clear of batter and you can remove the waffle easily from the mould, you’re good to go.

4. Mix the honey and cocoa powder over medium heat until fully combined. Drizzle over the waffles and enjoy!
