I love this recipe from The Saucy Fish Company for an alternative at lunchtimes - Salmon with Lime and Coriander Pitta

What you need: - Precooked salmon fillet - 3 limes - Fresh, chopper coriander leaves - Flat breads - 1 large avocado - Mango - 1 Tomato - Lime juice - Coriander to garnish - ½ chilli (optional)

How to make it: 1. Dice the avocado, mango and tomato and place in a side dish

2. To preserve your mixed salad squeeze lime juice over the mixture to prevent it from browning

3. Place the flatbreads in a pre-heated oven with a small smattering of water for 2-3minutes

4. Flake the precooked salmon into your flatbread coupled with the salad mix

5. For the dressing, squeeze the juice from three limes and mix with the chopped coriander – add chilli for added flavour

6. Delicately drizzle the lime & coriander dressing to your taste

7. Enjoy! Top tip: save time by picking up The Saucy Fish Co.’s Ready to Eat Steamed Salmon with Lime and Coriander Dressing – all precooked and ready to go! Recipe courtesy of The Saucy Fish Co.

TOP 5 ‘FISH TIPS’ FROM DR SARAH SCHENKER

The Saucy Fish Co.’s dietitian, Dr Sarah Schenker, shares her top 5 resaons to enjoy more fish, more often:

1. Did you know a healthy diet should consist of two portions of per week? Make sure you’re eating enough fish; there are so many different types of seafood available and a whole host of amazing recipes out there so there’s no excuse to be missing out on your recommended fish intake.

2. Oily fish, such as salmon, is rich sources of omega 3 fatty acids, which are essential for good mental health, brain function, energy production and to keep you heart healthy.

3. Salmon is also a great post gym snack as the protein helps to reduce inflammation, regulate insulin levels and support joints. The Saucy Fish Co.’s Ready to Eat range of salmon fillets and complimentary sauces are all precooked so ideal if you’re looking for protein on-the-go.

4. There are many benefits from eating fish including improving your appearance. Fish contains nutrients that are needed for healthy hair, strong nails and smooth skin.

5. Struggling to get the little ones to eat fish? Take them to the supermarket or fishmongers with you and get them to choose which products they want to try. If you involve them in the process they may be more inclined to try the end result.
