Healthy Snacks Recipes from Sweetpea Pantry

Founders of Sweetpea Pantry Tanya and Philippa were childhood friends and came up with the idea for Sweetpea Pantry as mums looking after their own kids and finding it hard to source healthy, nutritious snacks for them. The idea behind the brand was to design food that kids love to eat, familar snacks like cookies, but make them on the basis that they fulfill nutritional needs of healthy children and don;t rot their teeth.

Since then they've been awarded 'Best Loved Kids Food Brand' by Richard Branson at the Virgin Foodpreneurs Festival and we're HUGE fans of these two fantastic entrepreneurs and busy mums who make our lives easier and less guilt-ridden.

I made the below recipe for Chocolate Biscuit Bites this weekend as you'll have seen on my Instagram account (@darrylwellnesscentral) and it was so easy and delicious, i'll be making more this weekend again as demand for them was so high.

Sweetpea Pantry have been kind enough to share their recipe below, and you can source their packs from your local Marks and Spencer or local Health Store.

*Theres no refind sugar in the packs, but remember to swap honey for natural syrups like agave if you want to cut down on the fructose content.

Ingredients (makes approx 12 filled bites):

[if !supportLists]· [endif]1 packet Sweetpea Pantry Chocolate Giggles Biscuit Mix

[if !supportLists]· [endif]An egg white

[if !supportLists]· [endif]Unsalted butter or non-dairy alternative, such as coconut oil or butter.

[if !supportLists]· [endif]Honey

For the filling:

[if !supportLists]· [endif]3oz softened unsalted butter, or ½ tub of quark makes a really great low-fat filling

[if !supportLists]· [endif]24g granulated sugar (or alternative such as stevia)

[if !supportLists]· [endif]½ tsp vanilla extract

Method:

[if !supportLists]o [endif]Melt together the butter and honey

[if !supportLists]o [endif]In a separate bowl, whisk the egg white until frothy

[if !supportLists]o [endif]Combine the Sweetpea mix in another bowl with the butter and honey, adding in the egg white and stirring until completely combined

[if !supportLists]o [endif]Then, knead together into a firm ball and leave to cool

[if !supportLists]o [endif]Lightly dust the work bench, roll the mix out to a thickness of about 3-5mm and form circles using a cookie cutter

[if !supportLists]o [endif]Using a spatula, place onto a baking tray and pop it in a pre-heated oven at 180°C to pre-bake for about 8-10 minutes.

[if !supportLists]o [endif]Let them cool.

[if !supportLists]o [endif]Meanwhile, mix the butter or quark, the sugar and the vanilla extract in a bowl to make the filling to a stiff consistency, then spread onto one of the biscuits and top with another biscuit.

[if !supportLists]o [endif]To make a pink filling: add a few drops of a natural red food dye from a health store or alternatively, boil a couple of beetroots in a pot and add this bright red water to the mix!

[if !supportLists]o [endif]Store in the fridge to keep the filling set.
